Vegetarian Lasagna Recipe

12036712_10206817635252135_4733641260054983456_nI made this healthier version of a lasagna and it was so delicious! You should absolutely give it a try!

Ingredients:
-1 eggplant cut thin
-2 zucchini sliced thin
-3/4 jar of sauce
-15 oz part skim ricotta cheese mixed with 1 egg
-1 bag part skim shredded mozzarella cheese
-1 3/4 cups cooked lentils
-2 tbs oregano mixed in with the ricotta and egg

 

 

 

Instructions:

-Put a thin layer of the sauce on the bottom of the pan
-put thinly sliced eggplant down in 1 layer
-put a layer of the ricotta mixture down
-put a layer of the thinly sliced zucchini down
-sprinkle some shredded mozzarella
-put down layer of the cooked lentils
-keep repeating then the top layer is sauce, ricotta and shredded mozzarella
-Cook at 400 for 35-40 minutes
